When you have such a beautiful cut of meat, keep it simple with aromatics! Here's a 1-minute recipe of onion and beer sauce that will go perfectly with a large steak cooked simply with salt on a charcoal grill.
* ingredients :
+Meat:
°1 rib steak (about 500 grams)
°15ml (1 tablespoon) salt - to your liking, but fleur de sel or sea salt works great
+To make the onion and beer sauce:
°15 ml of vegetable oil
°1 onion, chopped (cut into halves)
°2 pinch salt
°60ml (4 tablespoons) beer - red or black for extra flavour
°30 ml (2 tablespoons) butter
°pepper to taste
Meat:
Remove the steak from the refrigerator 30 minutes before cooking to let the meat cool.
During this time, if you have a charcoal grill, start the fire to get very hot coals.
Coat all sides of the steak with salt and place it on the hottest part of the grill. Cook about 3-5 minutes per side, depending on the thickness of the steak. You want a nice crust to keep the meat juices inside.
Remove from heat, cover with tin foil and leave for 8 minutes (ideal time to prepare the sauce).
To make the onion and beer sauce:
In a frying pan, put the oil, onion and salt and then place it over a medium heat over a medium heat. You should start with "cold" heat to sweat the onions for 10 minutes or until translucent.
Remove it from the beer and lower it for about 1 minute.
Add butter and beat for 3 minutes.
Season with pepper and fresh herbs (no need to add salt), coat steak with sirloin and serve immediately.
