* Ingredients :

° 500 ml (2 cups) flour
° 5 ml (1 teaspoon) baking powder
° 5 ml (1 teaspoon) baking soda
° ½ teaspoon (2.5 ml) salt
° ½ teaspoon (2.5 ml) cinnamon
° 1/2 teaspoon (2.5 ml) nutmeg
° 1/2 teaspoon (2.5 ml) ground ginger
° 4 eggs
° 250 ml (1 cup) canola oil
° 5 ml (1 teaspoon) of vanilla
° 15 ml (1 tablespoon) orange peel
° 180 ml (3/4 cup) brown sugar
° 180 ml (3/4 cup) sugar
° 750 ml (3 cups) shredded carrots
° 2 cups (500 ml) chopped nuts
To decorate:
° 2 packs of cream cheese, 250g each, soft
° 1/2 cup (125 ml) softened butter
° 5 ml (1 teaspoon) of vanilla
° 1 liter (4 cups) powdered sugar
For decoration:
° 2 carrots
° 60 ml honey

* Preparation :

Preheat the oven to 180°C (350°F).
In a bowl, combine the flour, baking powder, baking soda, salt and spices.

Using an electric mixer, beat eggs, oil, vanilla, husks, brown sugar, and sugar in a separate bowl. Add the grated carrots.
Gradually add the dry ingredients mixture and stir until a smooth dough is obtained.

Grease two 20 cm (8 in) round cake pans with butter, then spread the dough over them. Bake for 30 to 35 minutes, until a toothpick inserted in the center of the cake comes out clean. Let it cool on the rack and open it.

Using an electric mixer, beat cream cheese, butter, vanilla and powdered sugar until creamy texture is achieved.

Spread a little frosting on the first cake, then cover with the second cake. Spread the remaining amount of frosting on top and sides of the cake formed in this way. Decorate the edge of the cake with walnuts. Refrigerate for 1 to 2 hours.
Using a mandolin, cut the carrots into thin strips. Put in a bowl.

Heat the honey in the microwave until it starts to boil. Pour over the carrot strips and toss gently. Decorate the cake with carrot strips.
