It's healthy, & 1,000 times better than what you'll find in box!Full of taste also easy to prepare, you can't go wrong with big, hot-vegetable-soup.
**Ingredients :
° 2 tsp oil-olive
° 1 1/2 c chop yellow onion (1 medium)
° 2 c peel also chop carrots (about 5)
° 1 1/4 cups chopped celery (about 3)
° 4 cloves garlic, minced
° 4 cans (14.5 oz) low-sodium chicken broth* or vegetable broth
° 2 (14.5 ounces) cans chopped tomatoes (not drained)
° 3 cups, peeled and 1/2 inch thick cubes of potatoes (from about 3 medium)
° 1/3 cup fresh chopped parsley
° 2 bay leaves
° 1/2 teaspoon dried thyme
° Salt also freshly ground pepperblack
° 1 1/2 cups frozen or fresh green beans, chopped
° 1 1/4 cup frozen or fresh corn
° 1 cup frozen or fresh peas
* Directions :
Heat olive oil in saucepan on medium hiigh heat.
Add onions, carrots and celery and sauté for 4 minutes, then add garlic and sauté for 30 seconds.
Adding broth, tomatoes, potatoes, parsley, bay leaf & thyme also season with salt // pepper to taste*.
Bring the mixture to a boil, then add the green beans.
Reduce the heat to medium-low, cover the potatoes and simmer until the potatoes are almost fully cooked, about 20-30 minutes.
Add corn and peas and cook for 5 minutes. Her feet are warm.
