Apple Butter


If you don't know, this is a Canadian recipe a bit similar to compote in preparation, however the taste and texture are not quite the same. We add a little butter (we can put more but I found that sufficient) and maple syrup, the taste reminded me of tarte tatin! The caramelized effect of maple syrup, yum! To spread for breakfast, it's excellent and less sweet than jam :-)

* Ingredients: (for a 450g jar)

° 4 apples - net weight here 520g (peeled and seeded)
° 20ml maple syrup
° 40g unsalted butter

* Preperation:

Peel and seed the apples, then cut them into small pieces.
Place in a sauté pan and drizzle with maple syrup. Leave to stew for about 20 minutes, stirring occasionally.
Once the apples are well melted, mix them with a hand blender (or blender), add the butter and mix well.
Store in an airtight glass jar in a cool place for up to a week.
