HEALTHY HONEY-ROASTED CARROTS




When it comes to veggies, I usually say that roasting is the most kid-friendly method of preparation. The roasting process reduces the intensity of the flavor and aids in the release of natural sugars. 

Carrots are one of the tastiest vegetables available, which makes them particularly well suited for roasted preparations. They are wonderful when roasted with only a drizzle of olive oil and a few fresh herbs, but when baked with honey, they are elevated to a whole new, kid-friendly level.

INGREDIENTS REQUIRED: 

– 2 Pounds.Of medium Carrots. 

– 2 large spoons.Of Olive Oil. 

– 2 large spoons.Of Honey. 

– 1/2 small spoon.Of minced Garlic.

– 1/2 small spoon.Of ground Ginger.

EQUIPMENT NEEDED: 

– Baking sheet.

– Mixing Bowl.

PREPARATION: 

– 1st Step: Set the oven to 200 degrees Celsius / 400 degrees Fahrenheit. 

– 2nd Step: Then, peel your Carrots, and if they are very thick, cut them in half lengthwise; if they are not, leave them as is. Cut the carrots into 3-4 cm (1 1/2-inch) thick slices by slicing them diagonally. 

– 3rd Step: Combine the olive oil, honey, ginger, and garlic in a large mixing bowl until everything is well mixed. Toss the carrots in the honey/oil marinade until they are well coated. 

– 4th Step: Using a sheet pan, arrange the carrots in one layer on a baking sheet. Drizzle with a bit of the leftover marinade and roast for 20 minutes, or until the carrots are golden and soft. 

– 5th Step: Toss in the remaining marinade and season with salt and pepper to taste.
