Easy black bean taco

Served in crunchy corn husks and packed with a classic taco topping, the vegan black bean taco is so desirable you clearly might not pass over the meat.

Based to your feedback and my preference to create greater vegan recipes for vegans and people seeking to reduce returned on their meat consumption (strive Meatless Monday!  ), you may love those Crunchy Black Bean Tacos. Make it a pageant with cilantro, lime, and guacamole rice at the side! And in case you prefer red meat, those slow-cooking red meat tacos are a favourite in my house!

* Ingredients :

* Beans:
° 1 tablespoon olive oil
° ½ small yellow onion, cut into cubes
° 1 clove minced garlic
° 1 15-ounce package black beans, drained and rinsed
° Half a teaspoon of cumin
° ½ teaspoon smoked paprika
° 1/8 teaspoon cayenne pepper
° ½ teaspoon kosher salt
° Freshly ground black pepper, to taste
° 1 tablespoon tomato paste
° 1 tablespoon water
* For tacos:
° eight Hard Corn Taco Shells, I Love Old El Paso Stand 'n' Stuff
° four oz. avocado, from 1 small
° Juice of 1/2 of a small lemon
° pinch of kosher salt
° Freshly black pepper, to flavor
° ¼ cup cheese cheddar
° 1 plum tomato, cutting to cubes
° 1 cup romaine lettuce

* Directions  :

Preheat oven according to taco container directions. Lay the taco shells out on a tray in an excellent layer. When hot, bake the crust for 6-7 mins.

Meanwhile, warmness a big skillet over medium warmness. Add canola oil and stir to coat the pan then upload onion and sauté for 2-three mins till onion is softened and translucent.

Add garlic and saute for 30 seconds. Add the beans, spices, tomato paste and water and blend till combined.

In a small bowl, mash avocado with a fork till smooth. Adding lemon juice, salt / pepper.
To bring together the tacos:
Lay the taco shells out on a flat surface. Top every shell with 1/8th of the bean mixture, then the cheese, mashed avocado, tomato, and lettuce. Feet it right away.
